He attended various professional pastry chef programs in France and Belgium, and is the author of four cookbooks, his most recent, The Great Book of Chocolate, the complete guide to everything you want to know about chocolate (with recipes) and the best-selling The Perfect Scoop, which has over 200 recipes for ice cream, sorbets, sherbets, and all the yummy accompaniments that get swirled inside, mixed in, and drizzled over the top.
