Best of the Best
Although this knife is not sold as a paring knife - a fluting knife is used for fluting mushrooms - it is my preferred paring knife. The short blade means that it is not necessary to choke up as high on the blade for many cutting and peeling techniques, and when choked up on the blade, the handle doesn’t extend too far outside my hand causing balance issues. Surprisingly, the blade is still long enough to hold with a pinch grip for certain cutting techniques, like boning a chicken.
