This knife may have the largest blade of any 10-inch chef’s knife. The cutting edge is more curved than other chef’s knives to provide a swing similar to 8- and 6-inch chef’s knives. Even though the distance from the spine to the cutting edge is larger with this knife, the thickness of the spine is still small so the wedge angle of the blade is very slight. The hollow metal handle is loaded with copper at the butt to balance the weight of the blade. According to the manufacturer, you can compensate for the loss of blade weight by removing some of the copper tip at the same time you sharpen the cutting edge. The handle has been designed so that if your hand is greasy or wet, you will “squeeze” the blade away from your hand rather than towards it, as with other knives.
